About Stir Frying
To make the stir fry, a wok or large pan is heated to very hot, and a small amount of fat (usually vegetable oil) and seasonings are added. Meats are added first and are cooked until no longer pink, at which point vegetables are added. The foods are stirred continuously while being cooked, as to prevent burning or scorching in the hot pan. Finally, any liquid ingredients or sauces are added to the pan and are quickly cooked down to coat the ingredients. Grains such as rice or noodles are typically cooked in the same pan as the stir fry, or are served alongside the stir fry.
